Great Flour!
Two members of our household are gluten-free, and I enjoy using different flours for the variety of texture and flavor. Lupin is an interesting flour to try because it is made from beans - I just never would have thought that it could be ground the consistency of flour! Surprisingly, it measures and bakes just like other flours we have tried, so that’s a big plus, as we aren’t the world’s most savvy bakers, so it needs to be simple. We didn’t notice any bitterness or difference in flavor like others did, but maybe it was the recipes that we used with it. I like it because it has 6 grams of fiber and 11 grams of protein, as we as a low glycemic index and a high content of essential acids. (I don’t like to use anything that doesn’t have a good nutritional profile.). There’s also no preservatives, and I always feel like beans are a healthier choice than rice. I did transfer it to another container once the bag was open, though, to lock the freshness in. The bag is a nice touch, but it doesn’t keep the flour as fresh as I would like. This flour is a great flour - whether you are looking for a gluten-free alternative or not! I highly recommend it!

Not a bad low carb flour substitute
The good:This is a very fine powder like wheat flour.It's a good choice if you don't like the graininess of almond flour.Low carbThe bad:People say it has an off-putting smell (I didn't notice it)The taste can be bitter.It shouldn't be used as a one-to-one sub for almond flour. If you need one cup of almond flour in a recipe, you should use ½ almond and ½ cup lupin. This makes for a better tasting result.I used it to make pizza crust with a 1:3 ratio of almond flour to lupin flour. Additional ingredients included mozzarella cheese, oregano, baking power, and eggs. The crust turned out wonderful with a good chewy texture. However, two hours later i had digestive issues. I don't know if this was caused by the lupin or not. I've read to introduce lupin to your diet slowly to avoid indigestion and gas.At ten dollars a pound, I won't be using this every day. Be sure to read what you can about lupin on the web before you dive in head first. There are lots of recipes available.

Very bitter aftertaste
This is the first time I used lupin flour. I wanted to try it because of it being very low in carbs. I really wanted to love this, but I just can't get over the bitterness and the terrible aftertaste it leaves in my mouth. I made waffles this morning and they were very dry, crumbly and left a nasty aftertaste. I ended up throwing out the waffles in the garbage. Althought the bitterness is not for me, it might be for someone who has a fitting recipe.

Lupin flour is low carb/high protein - fantastic for keto and diabetics or just healthy eating!
Lupin flour is new to me, and I've been reading up on its attributes. It's easy to digest, unusually low carb and high protein with significant dietary fiber, too. This is a healthy flour alternative. Shipetaukin Sweet Lupin Flour is a high quality product. We actually tried lupini beans for the first time a few months ago. We were unfamiliar, and they were a healthy snack. Replacing my other GF flours that rely too heavily on rice with lupin, oats, and coconut, is much better for my body. The lupin flour cooks faster than most others, so check your baked goods for browning early. I'm still searching for more recipes that are easy and vegan. Most seem to use a big mix of flours with only a little lupin flour. Almond flour with a little lupin flour makes excellent chocolate chip cookies. The almond flour is rather high fat for me, so I'm hoping to find more existing vegan recipes. Otherwise, I will experiment using oat flour and lupin flour - two healthy choices. I've been impressed with the wide variety of GF flours that this brand produces. I highly recommend giving this lupin flour a try.

A good Keto diet option
I’m not on ketogenic diet all the time, but once in a while, I’d like to do it when I feel my body needs it.I’m more familiar with almond flour and coconut flour, and use them quite often. I am always open to and interested in new things though. This lupin flour is a new thing to me. It is non-GMO, and all natural without extra additives, a very healthy option.I’m glad to see there’s even a recipe provided on this product’s page, and that makes it easy as the first step for me to try this flour. I made small adjustment to the recipe, reducing sugar needed since I don’t like too sweet stuff. The outcome is very satisfactory. The cookies are delicious, and to me, they don’t taste bitter at all. I like the flavor and texture it offers to the food. I am so happy to find this new type is flour, and I’m sure it will become something frequents my kitchen.

Flavor bitter with aftertaste
I used these in a lupin flour containing blueberry pancake recipe. They turned out very bitter with an unpleasant aftertaste (raw green beans flavor). This may be common for lupin flour but this strong unpleasant flavor would be difficult to cover up. At some point, I rather just not eat something than have the low carb version 🤷♀️.The pancakes (with homemade elderberry syrup) were also very crumbly and sponge-like, instantly soaking up the syrup. These things did not bother me. I just couldn’t get past that flavor.It is completely possible that this is good quality product and I just do not like Lupin Powder. However, their package says it is a flavor neutral flour and I completely disagree. Therefore, I am giving a 3-star review.
