What’s the diameter of the center hole? My fixture has a 1/2 inch OD threaded rod to go through.

The center hole may be metric. Mine measures a tad over 17/32" so a 1/2" rod should fit through.

Can this be used to move a bathroom vanity light over? About an once to center it.

I may not understand the question. If you mean can you move the light an INCH off center (You wrote once??) it might be possible. There are numerous mounting holes and maybe some would line up with where you want to be, but that would depend on where the screws are located in your particular fixture. Also, if you move too far, your fixture's plate might no longer cover the opening.
