Great product! No cooking instructions
I found this to be a great product! This was my very first experience with isomalt. I was able to make all the decorations I needed and I still have some left over. My only complaint is this does not come with any instructions. Kudos to modernistpantry.com for being very responsive to emails and a big thank you to the Amazon community for answering my questions. I'm adding how I cooked it here in case others have the same questions I did. I put the entire contents of the bag and 100 grams of water in a heavy bottom pan over medium high heat stirring only until the mixture was mostly dissolved. I let it boil to 338 degrees then removed the pan from the stove and placed it immediately in a sink of cold water for about 5 seconds. I set it aside to cool to 275 degrees then added hard candy type flavoring and poured it into silicone baking cups. I let it cool and then reheated what I needed in the microwave at 15-30 second intervals for about one minute then added my food coloring. I worked on a silicone mat and kept it warm under a heat lamp while I made my pieces. I included a photo of a few pieces I made. I have to add a desiccant is important to keep the pieces from getting a little sticky after they are made. Some have recommended using a food grade lacquer to prevent this. All in all I had a great time working with it and I would not hestitate to buy this product again.Notes: I used LorAnn Oils flavoring and colors. I highly recommend a double layer of gloves. If this gets on your hands with two layers of gloves you have the opportunity to pull the top layer off before the heat has time to blister. A heat lamp of some type will keep the cooked isomalt soft without the need to microwave as frequently.

Easiest Isomalt Yet
Please don’t listen to the other reviews: It is NOT necessary to add water to these granules. They work perfectly by themselves. It’s the easiest, clearest Isomalt I’ve ever used! You heat it to melting and then pour as you see fit for your decoration or candy. I’m not making specific candies, only decor for custom cakes, so temperature isn’t a big deal. I literally melted, added gel food coloring, and poured. I can achieve amazing looks in no time at all! I even added 24-K gold flakes into the melted Isomalt so the gold would be imbedded into it.Something for beginners to know: Isomalt is fragile if it’s poured thinly. Think sugar glass. It also gets cloudy and sticky in humid weather. Painting it lightly with vegetable oil allows it to keep its shine. Use an actual small paintbrush, not a paper towel — the paper will stick to the Isomalt. Super handy hack. :)

Worth it for confectioners, not for regular bakers
I was looking for isomalt sugar as a sucrose substitute for my pre-diabetic father. Isomalt only has about half the sweetness of table sugar but it doesn't trigger insulin release so I thought we could give it a try. I know it is a wonderful sugar to use for making delicate sugar decorations for cakes/cupcakes/etc because it works very well for molding and holding its shape. As a substitute for sucrose, I've decided against that for the following reasons: 1)The high price means it's just not a sustainable option for the amount of sugar that we use in coffee/tea and baking around our house, 2)The sweetness factor, or lack thereof, is quite a shock when switching directly from sucrose and we'll have to try find a happy medium for the time being, and 3)It is really not a substitute for sucrose in baking since it makes anything you bake really dry. I don't know if this is because of this particular brand's granule size (about the size of a nerds candy) or if I simply did the measurement conversion wrong (which is entirely possible lol). Another thing, neither the packaging or the website contains any information on conversions, which is a basic kitchen function and I assumed all packing had it. I went online and found the information elsewhere, but it would be nice to have had it on the bag. Overall, a good product, nothing wrong with it, came in a nice bag, well-packaged, obviously quality material, but it just doesn't fit my needs.

Happy with the product - some independent research required
I had never used isomalt before, but it was easy to use and worked perfectly for crystal clear gingerbread house windows! (see pics) The package arrived intact and exactly as described.The only downside to this specific product is that the packaging did not have instructions for melting or using the isomalt crystals. It did suggest I visit a URL to a less-than-helpful 404 error. I found the site after some quick googling, however there were still no basic instructions for using the isomalt. Luckily it's not too hard to figure out, and there are numerous other sources online, it just would have been nice to have instructions right there on the beautiful-but-vague package.Note on gingerbread house window pics: the checkered texture is from pouring the isomalt onto a silpat mat and is easily removed by quickly heating the surface with a blowtorch. I really couldn't be happier with the glass-like finish!

Great sugar for decorative work
You can make flowers, crystals, and a lot of fun decorations. Isomalt is about 1/2 sweetness as sucrose sugar & will stay pliable longer than sucrose but still will be hot. I use silicone baking mats and a pencil-tip torch to more accurately heat spots to glue together, so suggest you get those, if you don't have them. This product looks a little yellow but will become very clear once it melts. Good price & I've found I use a lot more than I would've guessed.

This stuff is magic
I honestly didnt know what to expect when I ordered this product. While I have made sculptures with sugar by freehand and moulds I was completely blown away with the quality and ease of use of Isomalt. As a professional baker and pastry chef for the last 20 years I can honestly say that this is a complete game changer when adding razzle dazzle to finished pieces. This product is so easy to use I would say that complete novices can use it to add professional flourishes which are sure to blow the minds of dinner guests without the headache and danger of handling sugar. I am completely blown away! I Highly recommend.
