THE BEST red wine vinegar
Badia RWV has been my go-to for more than 30 years in my professional and home cooking. It is bright And flavorful without tasting like leftover red wine as so many red wine vinegars do.

exceptional taste, and worth every penny
In foodstuffs, you get what you pay for. This is particularly true in vinegars. I am somewhat of a vinegar connoisseur, having made my way through arcane Chinese vinegars, pear vinegar, tarragon vinegar, assorted red and white wine vinegars, sherry vinegar, peach vinegar, etc. This one seems to be just another vinegar but has an unusual property: it lends a beautiful background bouquet to every dressing I have made with it. Sometimes vinaigrette dressings lack what I call "body". This vinegar provides it. I don't know how they do it, but a hint is provided in the descriptive literature: the vinegar is filtered through cedar shavings. This product is exceptional. It has no overbearing acidic taste. Buy this vinegar. Use it sparingly if you must, but you should experience it. I grieve at the price, but I just suck it up.

Excellent quality, but overpriced
This has about the same quality as Sasso Aceto di Vino Rosso Riserva, which is much less expensive, but I can no longer find the Sasso in the United States. So I'm stuck paying for the Badia a Coltibuono for now.
