I worked two seasons of the NJ/PA hunting season as a butcher and each season me and another guy cut over 2000 deer together, each with the same knife for nearly the whole season. So, to be clear, I'd come in around number 400 and leave around number 2000 so, if you figure that we both did about half each then we both cut ~800 dear each during that period. We also cut a few bears, some pig and some lamb but whatever. I used only one knife each season but he did change to a new one at some point. So, what that means is that I skinned, deboned and cut up about 800 deer with just this knife. Sure, it was definitely done by the 800th deer. But it could still hold an okay edge for a little while after, to be used as a toss-around knife on this and that. These are very durable knives with a perfectly positioned sweet spot. They hold an edge for a long time and don't wear down too quickly. I just bought this one for some lighter duty work and will never buy another type of boning knife ever in my career.
