You don't. The waffle plates are stationary. You could use an old toothbrush to clean them.

Can any of the 3 items be used for making crepes?

Yes, but VERY small ones! Clean-up is a breeze, also!

Will it make a over easy or sunny side up egg?

Yes. Sunny side up- leave the lid open, over easy- close the lid. Will need to keep an eye on them cuz the yolk can quickly cook to over hard.
