Re-hydrate quickly
I got these to use in a recipe from my Swedish sister in law, although they may seem expensive you only need a few to get the flavour and texture needed. They will keep a long time in an airtight container.

Expensive - no doubt due to the careful processing involved - but needs must to get the best form of lingonberry available if one lives far from the bushes on which they grow!

Quite tart, needs some sweetness for balance
These little Red berries are grown in Finland and are very low calorieWe use dried fruit on breakfast oats to add some extra flavour and because they are one of our 5 a day.The bag is much bigger than I expected so probably wont fit through a astandard letterbox, see the photo.Because the berries are freeze dried they weigh only a fraction of their original weight so although it sounds as though there are not going to be many berries at 4 oz, there are actually loads. 32 ounces of them before they were dried according to the package.The bag is marked with notches so you can cut off the top and then use the zip lock feature to reclose it when you want to.Once opened they are good for 60 days and the bag is stiff enough to stand by itself in the cupboard.Flavour is quite tart with a little edge of sweet flavour, a bit like a black currant but more leaning towards a sharpish raspberry. They look like redcurrants in colour and shape but are the size of blackcurrants.They arent shrivelled like currants even though they are dry and have no waxes or anything added.They are crunchy dry straight from the pack.Added to cereal, they turn the milk pink almost instantly.I found that they were a little too sharp on their own but lovely as an addition to something else sweet.I had some pineapple pieces with mine after trying them without. The sweet and tart flavours go very well together.In baking, its possible to use two ways to weigh them.The first is dry weight which is obviously going to use a lot of berries and they are sharp tasting so the more you use, the more you must compensate with a sweet element.The second is to divide the weight of berries that are in the recipe, by 8 (so if you need 8 oz of dried fruit, use 1 ounce of the freeze dried lingonberries)and then add them to water or juice and and drain before using in the recipe.I recommend using juice to help with the tartness.I did the dividing and soaking version for some 'garibaldi' type biscuits.They were a little moist on rolling the dough as you have to roll very heavily for this biscuit style to sandwich the berries within but it didnt hurt the biscuits ..These would work well in trail bar type biscuits for hiking along with nuts and raisins or in flapjacks perhaps with dried pineapple.We love them but I think small children might find them just too sharp unless something extremely sweet is served with them.

Freeze-Dried Natural Organic Wild Lingonberries
I’d never tried these berries before but they are really nice mixed with cereals or yogurt. They remind me a bit like cranberries - more a bitter than sweet taste but I like that. Not bad at all.
