Lefty can use
I bought this nice tool about 3 years ago because I was looking for a non-Chef knife that can be used left handed. It was very sharp out the box at the time and I was able to use with my left hand. I used it to break down chicken, yes, but until recently it was my preferred vegetable prep knife too. Then it went a little dull. Probably the terrible cutting board I was using. And it had been years. I had no time to get them sharpened. I recently acquired a waterstone type sharpener and sharpened all my knives. I rediscovered this knife again. And from sharpening, you have to pay attention to the bevel. I'm new to using the stone to sharpen but I really notice the difference after honing it a bit, its even easier to use with my left hand now.It's rigid and stiff, shorter knife, which is fine but a touch heavy for lots and lots of chopping, so I use a Miyabi hollow edge santoku for that now. But its fine for a slicing veggies. But I sharpened it and broke down a chicken with ease. It slices through skin and flesh like butter. It is perfect for its intended use, deboning, but its multipurpose and a pretty good prep knife too.

Great Knife
I'm a chef and have owned this knife for a while now. It was the 2nd knife I purchased from this company. Suffice to say I am more than pleased with my purchases. It remains as sharp as the day I bought it, despite having broken down innumerable chickens, turkeys, and a few ducks. The heavier handle makes a perfect counter balance to the blade. If you prefer a rigid boning knife, this is an excellent quality knife that glides through poultry.

I've used this knife for about a month and it's still sharp. I've used it in various kinds of meat and I'm really comfortable using it. All the other reviews about this brand is true and I've already purchased the slicer. Really excited about getting completing a set of yoshihiro knives.
