This is the first time I have used these peppers in a recipe, to try a new recipe to me (birria tacos). I rarely write reviews, but I have to rave about these peppers because the quality is outstanding, in my opinion. Again, a newbie with these, but these peppers are not dried out, they are pliable, leathery and seem really fresh. I wanted to get the seeds out. They were strong and soft enough for me to gently stick my knife down into them (after cutting the tops off) and rotating it around to knock all the seeds loose. The flavor after cooking was delicious. I cooked them for about 3 hours whole & then put in blender & put the slurry into a tied up cloth & back into the pot to continue to seep it's goodness into the meat broth. They are fantastic! Buy with confidence!(My husband later bought some other dried guajillo peppers in El Paso, and it was then that I realized that they are not all packaged and made the same. The ones he bought were all dried out and broke easily. I can foresee more of a challenge separating the seeds due to their fragility. I hesitate these on anything but a cheap piece of meat (as if that exists anymore in today's market) or some burger. The bag was torn, as it wasn't strong like the one in the review, and I can see I will have more of a challenge separating the seeds.)

This is the perfect size for 1-2 recipes. I used these for tamales and they were excellent flavor. Great value and shipped quickly!

Very nice peppers for color! Good very mild chili flavor. Hard to make chilli crisp with as the nature of thick walled peppers always prevents the true dry crispieness.

Used chilis to make red sauce for pork tamales and they were delicious!

I have been using this brand for 5-6 years for tamale making for Christmas. Never been disappointed with the quality. Across all chili types this brand is great.
