Good cookbook
This was to replace my old copy of the book, well worn. I was in dangerof losing much loved recipes

good cookbook
This cookbook is what I was looking for. The recipes were simple and easy to follow, my only issue was some of the ingredients were not available in any supermarket in my area and I had to make separate trips to a health food store.

Is just okay
Not a huge fan of this cookbook. I like EASY recipies and didn't find this super easy even though it states it in the title.

Southwest Style Shrimp is one of my favorites.
I bought this cookbook in 1997 and thought I would write about one of the recipes that's still a favorite in my "rotation". I've adapted it a bit from the recipe on page 195. I make a marinade using juice of 2 limes, coriander, cumin, etc., with which I marinate some shrimp for an hour or so. In cold-pressed peanut oil in my large non-stick saute pan, I saute a chopped red onion, add some chopped red and orange peppers along with some minced garlic. After they are all tender, the shrimp and its marinade go in, plus a little chicken or vegetable broth, then simmer over low heat. Add some chopped cilantro and two cut-up avocados. Serve over brown rice. My spouse and I both love it! And it's healthy too! I'm making it today; I just put the shrimp in the fridge to marinate.
