They have an odor, I suppose that's what dried eggs smell like. Scrambled eggs in the skillet are better than in the microwave. I'm not anxious to use up what I bought as scrambled but in baking I can't tell from fresh laid. I took them to my sister's to make breakfast and she wouldn't have anything to do with them. I do recommend them. I don't use eggs often. They'll sit in the fridge for months and I have eaten two month old eggs from the fridge and no ailments. So for me these counter top storage powdered eggs are the way to go.
