I tried different rubs from Heath Riles after watching him in a rib video with Malcolm Reed. These guys are pros and my family loved the ribs I made following their recipe. Thanks guys for making me look good!

No instructions but you can go on u toob and watch him use everything in this kit to make his ribs. I followed the video instructions to the letter other than the brand of ribs. I live in NC but dont know where he gets those ribs. The pig has a lot to do with the finished product. The flavor was good but not great. I think if I had gone heavier on each of the 4 rubs (although he tells you go light on the Garlic Jalapeno) my ribs would have turned out better. You would think after 4 rubs, a braising sauce and a glazing sauce that you would have quite a lot of bark but I did not. The final sweet rub and the glazing sauce left the ribs with a grainy mouth feel. I think the glaze "cook" of 15 mins was too short. After all this is an abbreviated 3-2-1 method. I will try the full 6 hr cook next time and more rub. Terribly expensive for what it is. Glad I got it as an asked for Xmas present. Update: Ran out of time yesterday and it got to be 1pm before I wanted it to be. Did the mustard and 3 rubs on 2 slabs of St. Louis ribs. Smoked 3 hours at 275 with apple wood and a big pan of water. Glazed with 1pts/2pts sauces and cooked 30 minutes more. They were delicious. Could have smoked another hour over water before glaze but like I said ran out of time. I dont know why you would want to wash off the rubs with that "butter bath". These turned out way better than doing that and steaming for 2 hrs. And didnt even use the 4th rub which made first batch turn out grainy.
