For someone that is new to using beef dripping why should I use this instead of the £1 britannia beef dripping from my local supermarket?

Because the cattle from which cheaper versions are derived are likely to have been fed a diet heavy in grains. Grains are high in omega-6 fatty acids, which become incorporated into the animals' fatty tissues,making them relatively higher in polyunsaturates. Polyunsaturated fats are prone to oxidise and become toxic when heated, though they will oxidise in contact with the oxygen in the air even at room temperature, albeit more slowly. Omega-6 fatty acids also tend to be pro-inflammatory. Yes, certain omega-6 fats are essential for human health, but the standard Anglian, American, Australian... diet or S.A.D. has too high a proportion of them. With cheap versions of beef fat (tallow) you also don't know what other gubbins you might be ingesting via the food chain.

I could not guarantee that no grains were fed to animals, as a retired farmer i woud say that the main diet would be grass, but i would supplement with grain concentrate through the winter.

No rosemary extract in the dripping! It is a delicious product which makes superb roast potatoes!

Is this true tallow rendered from suet, or from other subcutaneous fat?

I believe it’s subcutaneous fat as it has a golden tinge that builds up from beta-carotene deposition, and caul fat from around the kidney is white. Suet is made from the sac around the kidney, and you scrape it off.
