Ceylon cinnamon is generally thinner rolls with more layers, with a weaker aroma and taste, but also a somewhat different flavor. More importantly it has dramatically lower levels of coumarin, so is safer to eat in larger quantities. I've tried a few brands of Ceylon cinnamon and so far, this has been the freshest with the strongest odor/flavor (though still less than Cassia, of course).

These are good quality ceylon cinnamon sticks. Second time Ive ordered. You get a huge bag. None of them are broken, none of them are moldy or old looking. And you get a huge bag. Really like the packaging. Resealable bag seals perfectly every time. I mix these with chaga mushroom pieces to make hot tea

Definitely cinnamony, except for the fact Some of the sticks seem to not have any cinamon in them...

I read many reviews before ordering this cinnamon. But since the positive seemed to outweigh the negative, I went ahead. I have to say, that my bag did indeed smell of turpentine, not cinnamon, but I put a stick in my coffee anyway. I let it steep for a few minutes, but the taste was not good. Barely a hint of cinnamon, and just a strange taste to it. This may or may not be a coincidence, but 2 hours later I had terrible gripping pains in my stomach. Unfortunately, this is a non returnable item, but I guess being a prime member for 25 years has its perks, because Amazon refunded me without having to send it back. It went right in my trash can.
