Q: What kind do you use to make Injera? Light or dark? Any quick and easy recipe for injera as well please?

Injera can be made either with Brown or Ivory teff flour. We do not have anything "quick and easy" at this time, but are working on a revised web page on our website which will aim to be a helpful injera guide, so look out for that. In the meantime, there are resources available on the web which may help get you started. Best of luck!

Q: How long does this flour last in the package?

If stored in a cool, dry place it can be stored up to two years. We recommend less than 75 degrees and less than 50% humidity. You can extend the optimal consumption period by placing the flour in the fridge or freezer. Always remember to seal tightly after opening. Also, note that there is a best by date on the back of the package.
