Will this fit a wooden canoe paddle?

I don’t know the dimensions of a wooden canoe paddle but most likely not. It fits round kayak paddles up to about an inch in diameter.

What size drill bit did you use for the screws?

I used a 1/16. Screw fit tight. Put on the flattest surface you can find

What is the minimum to maximum distance for the mounting screws?

I spread mine out as far as they would go. It holds well. I would not put them close, that would be a small area of plastic those screws would be sharing. Hope this helps you
