It's a good sharp knife but kind of overpriced.
It's a very capable right out of the box and well balanced knife, it's a good bit of metal and will hold a very sharp edge. The handles are a nice touch imo.Before buying I'd read about this knife a bit both on amazon and elsewhere, it's a knife that's sold by a few different sellers with different branding. Currently the seller on amazon offers 30 day money back if you're not happy and a lifetime manufacturers defect warranty which is basically good thing though I hope not to need it lol.The same knife can be bought elsewhere for significantly less albeit without aforementioned warranty. The only real criticism I could offer aside from that is that it's not a full tang design. But honestly that's pretty common with japanese style knives, they tend to be part or hidden tang. If you use the knife as intended and hold it properly,not like a clever.. a part tang is unlikely to cause any problems with normal use.Overall I'm happy but I think the price is a bit high.

Is it uniqueness you want?
This knife was purchased as a birthday present for my son who recently started work in a restaurant part of a well known chain.The 8" Kiritsuke knife arrived before the expected day of arrival, was well packaged and with no damage.The box containing the knife is of very high quality and upon opening presents the knife beautifully.The knife itself is an item of high quality, visually drawing, very sharp and sits in the hand naturally and confidently. The Damascus patterning does draw the eye without doubt. The handle is octagonal in nature but sits very well in the hand in a positive way and is unique in its patterning and colour which adds to the whole.This is an expensive knife for a special occasion so consider your options. Clearly part of the money you are paying has gone into the box the knife arrives in but overall worth it I believe and I would consider buying another Hajegato knife.

Fresh, new impressively beautiful AND sharp
I'm a professional French chef working For 14 years as a chef and have many expensive knifes. This is first time I have come on amazon to buy a knife and what a beautiful knife I found. Been bored of same black and brown handles knifes. Its fresh something new & different I have never seen in my career. Its extremely sharp no problem tackling meat, fish or vegs. This knife is very well balanced & light weight makes it easy to use all day. Love the handle as it fits my big hands & the cut on blade helps in precise cutting or chopping. It's been few days I got this knife and already become my favourite knife. Every time I open my case the knife impresses me and. My colleagues. Will buy more soon ang highly recommend it.

Great knife
Really appreciate this knife, wonderful balance, beautifully sharp, good product excellent price, the handle is comfy. Was hoping for a funky colour, (didn't happen a generic brown) a good knife added to my knife box for work

Doesn't hold a sharp edge for long.
The media could not be loaded. Thought this would of been a nice purchase. The knife is well balanced, easy to hold and rocks nicely too.The downside is this the metal is too soft.While working I used it for a little light salad prep and nothing else and this is the result after maybe an hour of use vs one of my cheaper knives which I use everyday and haven't sharped in probably just over a week.It's a shame because this is a really nice looking knife but will be returning

Not quite as sharp as the nikiri.
I purchased a nikiri from Hajegato approximately 6 months ago. I have loved that blade since I got it. I have had to hone using a steel a few times and only now do I feel the need to put it on a stone to bring it back. That being said I received the Kiritsuke and Petty Knife 2 or 3 weeks ago and have found the Kiritsuke to be duller than how the other 2 knives arrived. However its still sharp and probably just needs a little bit of work on a stone to bring it to the correct sharpness.I have found the design of the knives very comfortable and don't get any aches from daily use like my other knives. I love the handles but would like some form of choice in it, like asking for a light or dark handle, considering how different each of my handles are I don't know how that would be made possible on Amazon. But that's me being overly critical.I look forward to when I can afford the Gyoto.

absolutely brilliant knife. i have used many kitchen knives but this has to be one of the best ones ive used to date, there is absolutely no resistance when cutting things like onions and actually makes the job very enjoyable. its a stunning looking knife with a very unique handle. im not entirely sure if it is real damascus but even if it isnt this is still one of the best knives i have ever used and would 100% recommend this to anyone. definitely worth the money!!
