Q: why is this dehydrator almost $500?

My wife and I bought a dehydrator for around 200$. Stainless, seemingly nice. Well, 2 years later and now every time we run it there is an electrical smell--like burning electrical. It slowly gasses our house and makes its way into the food, subtly. The thing isn't designed to take apart and monkey with, so, we will have to buy a new one since we use it pretty regularly. And can you guess which one we will buy? In the age of convivence and slave labor, please consider quality products from quality companies worth every penny.

Q: Are the shelves stored inside the folded-down unit? Or do you have to take them out and store them separately?

The shelves are stored separately. They come with their own zippered storage case which is about an inch high an keeps all the shelves together and clean while not in use.

Q: can the shelves be left out and the unit used as a proofing oven?

You could use it as a proofing oven, the lowest temperature would be 85 degrees but there is no humidity control. You can use the dehydrator to culturing yogurt and fermentation too.

Q: Does the significant gap between the doors have any affect on the dehydration process? Why don’t the door meet where they close? It seems inefficient

The gap between the doors is part of the design. The unit is not intended to be airtight, and the space between the doors helps maintain proper air circulation for even dehydrating.
