Edible collagen casings are made from natural skin fibers. They can be smoked and cooked just like natural casings, and come in exact uniform sizes for easier stuffing. Store under refrigeration for best results.

Sufficient, but not as easy to stuff as wet pork casings (he directions say to use dry), and as a result, can only fill sausages up to 12" or so. My goal was to make long rings to freeze for later use. They are definitely edible, but I find the texture slightly tough. I am grateful that they are available, as pork casings are getting more difficult to find, and will order again if I can't find natural pork casings locally.
