Can you use any manufacturers butane canister?

It can use any manufacturers butane canister what has a metal ring around the top of it with about a 1/2" slit missing.(Canister with snap joint) These fuel cans are the ones that fit portable gas stoves used in cooking, or camp stoves. You could find them at sporting goods stores, restaurant supply stores, any store selling camping gear. Or you could buy from the Amazon , like Gasone or Iwatani Butane Fuel Canister . The fuel canisters last a long time!

Any smell of residue butane when used to sear steaks?

I have tried it on numerous pieces of meat after cooking sous vide and have not noticed any odd smell or taste. I read somewhere to light the torch and wait a second or two to burn off any errant fuel before directing it towards the food. Hope this helps.
