Outstanding, comprehensive cookbook with recipes from respected ATK: would make a wonderful gift!
First, the book is enormous, with 802 pages and hundreds of recipes. It’s also comprehensive, including every recipe and every equipment/ingredient review from Cooks’ Country’s 12 seasons on PBS (in my area, the show airs on Saturday). Every recipe has a color photo, and many have additional photos demonstrating technique or ingredients. This book would make a wonderful gift for anyone who wants a little more inspiration in their recipes: for example, someone who might be thinking “I need another way to make chicken on a weeknight” or “What can I make for Fred’s birthday?” And all from respected America’s Test Kitchen (“We make the mistakes so that you don’t have to”).I also note that other reviewers had complained about the book’s binding. Mine is perfect. It’s such a heavy paperback that I won’t be surprised if some of the pages separate with heavy use over time; however, I note that the book lies flat even on the early pages, and I suspect that’s what the bookbinders were going for: a cookbook that would lie flat on our counter without having to put the customary can of tomatoes on one page to hold it down, so I’m very happy with the binding.It’s very meat-centric, with the variety of recipes being mind-boggling: I counted 50 chicken recipes (including a couple for turkey), 58 beef, 45 pork (including sausage and bacon), but only 16 fish. Many recipes are simple classics, but headnotes always explain why a tested twist makes it better: for example, the very best way to create a crust on pan-fried pork chops, or why the broiler works for perfect steaks. There are always specific instructions to help us make the dish, often with photos to show the technique. It’s not all simple weeknight fare: one chapter, “Our Sunday Best,” includes Herb-Crusted Beef Tenderloin, Crown Roast of Pork, and much more. There is also a chapter on Grilling! Excluding breakfast dishes, breads, cakes, cookies, pies, and desserts, I counted 68 dishes that did not include meat—including at least a dozen ways to cook potatoes. And, by the way, the “Great American Cakes and Cookies” chapter is brilliant: it does present several dozen classics, but some that you might not have heard of: Wellesley Fudge Cake?The book also includes one of my favorite treats from ATK’s extensive testing: there is an Equipment chapter with reviews (winners and runners-up) of 182 name brands of equipment; and an Ingredients chapter also naming brands of winners and runners-up in 160 categories: invaluable! Finally, I’m an ancient, know-it-all cook with zillions of cookbooks and hundreds of recipes in my files, but I stuck what may be a record 19 Post-It notes on the pages. Is their Smashed Potato Salad better than mine? And Crispy Parmesan Potatoes: I’ve never made anything like that! Count me in! An outstanding cookbook, and one that would make a great gift for anyone who cooks!

Well worth it.
So many different recipes getting through them will be a hefty task. All of them so far have been delicious. Great investment for me And to hand down to my family.

Good recipes, but binding broken after first use. What the heck?
So, We received this order just 3 days ago. I know that this will be a good cookbook because it is based off of the shows that i've been watching for years. I know the recipes. I know they are good. Hence, why I wanted this cookbook. Having said that... The defective binding is off-putting. Especially considering this is my first time using the cookbook. I simply laid the book on the counter open to the recipe page while making the recipe. By the time I was done mixing and ready to put the book back on the shelf, the pages had detached from the cover/binding. It normally takes years of use for that to happen. I don't even know what to say. Disappointed in purchase. I guess I could return it, ugh.

Great collection of recipes
If you are a fan of the Cook's Country show on PBS, then this is the book for you. Step-by-step recipes from the show are highlighted in this book, with pictures and easy to read directions. Just like when you are watching the show, you read these recipes and say to yourself "Piece of cake. I'm making that". Only now you'll have the pictures and directions to do it. Great cookbook.

The best for learning how to cook.
They never make a book I don't like. They take great care to test every recipe of course. I have many of the test kitchen books. I especially like the equipment reviews and brand name recommendations on tools, spices and ingredients so your dish comes out right. UPDATE: I love this book so much ( and I have many many cookbooks) that if I had a fire, I swear its the first thing id grab before ran out. This book wouldMake a much appreciated gift to anyone you know that enjoys simple home cooking. I purchased rhe paper back version this week after owning the kindle for a long time. . I like it even better now.

Great recipes/Tips...Not so great Binding.
The actual Cookbook is a great collection of recipes and helpful tips.Unfortunately, the back cover completely came apart from the spine after opening the book and laying it flat on the counter to read/follow a recipe.Might need to wrap rubber bands around it to keep the pages from falling out after it's been used a few more times.Disappointing, not sure if the hardcover editions have similar problems.

My go to cookbook.
I have the main Americas Test Kitchen cookbook which I love but, and the Menu Cookbook which they dont sell anymore that I highly reccomend if you can find it. However, after buying this, I find myself going back to it over and over. I have not missed with a recipe yet that I have gotten from this book. I highly reccomend springing for a decent food processor and dutch oven if you plan to use this book though. FYI the cowboy cookies make people think I am some kind of baking master.

Must Have Cookbook!
Best Comprehensive Cookbook Ever. First, there is a pic for every recipe. Half of eating is done with the eyes so seeing what you are going to whip up is helpful. Second, the book gives a little background info on the recipes and their origins. They also explain why they choose certain ingredients which is nice for those just starting to cook. And my favorite part? The simplicity of the recipes. No need to buy ingredients you will only use once or that you don't normally keep on hand. So far, everything I've tried is delicious!

Best cookbook design EVER
Even if you're not a fan of the show, this book won't disappoint - the layout is SUPERB, with each recipe on a single 2-page spread (no page turning! prop the book up & cook!) with a photo on one page & the recipe on the facing one - a big thank you to the editor(s) who made that choice, your work is appreciated :)I want to spend the next 6 months just doing recipe roulette - you can open the book at random and find something delicious every time. The care taken in designing the book is just another part of how carefully the entire project is created - the recipes are straightforward, relatively simple and very accessible no matter your level of cooking skill.Guess what everybody's getting for Xmas this year.

Happy To Be Living In Cook's Country
I'm a fan of the TV show and a big fan of this collection of their recipes and reviews. The book that I received was bound with the cover backwards and upside down, which in no way reflects on the excellence of its contents.

Great Resource
This was a gift for my husband. He is already an amazing cook/baker but he loves this book. Full of helpful suggestions and tricks, as well as great recipes from all 12 seasons of the show (which he also loves). Great for the new cook as well as the experienced.
