Is this a good bin for star gazing and looking at the moon?

For holding with hands better than a x50 but not as good as a x35 or x25. If you have a mount a x50 or x60 would be better. These binoculars are better suited for bird watching where star gazing is a secondary function.

Would these be useful in watching a rocket launch from 120 miles away? With my naked eye, I can barely see it if it has a smoke trail.

You need to have a magnification of 10x or even much higher. Additionally, you’ll need to steady your binoculars with a tripod, or by learning against or across an object -such as the hood of a car- or your image will be shaky. Really, a spotting scope would be best. Otherwise, the launch will still seem quite far away. Also, binoculars are NOT limited to 8x magnification.

Does it work for long range Elk hunt?

It only works for Deer, Moose and Elephants...just kidding :) it would work for any hunting if it helps you see

Are these considered "High Definition"?

It does not say high definition, but they are very clear. You can keep going up the scale and get better, but for the cost they are great.
