If you want to know how the restaurant business works, read it.
I bought this book for some people who bought a restaurant, but who knew nothing about the restaurant business. I read through the book and found there to be a wealth of information contained therein. Unfortunately, in the case of the people I bought it for, "you can lead a horse to water, but you can't make him drink." Don't be an onion head, read the book!

Love this book a lot! it has a lot of good ideas. I've read it so many times and I cant wait to start a restaurant.

Not for if you have already worked in the restaurant industry
This is a great book for those who are new to the world of restaurants and/or management but if you have spent any time in the industry and have some common sense this is not the book for you. It does cover almost every possible arena but they are brief overviews and mostly refer the reader to other books on the subject for more in depth information. It sounds to me that if you really want to be successful and you have experience then take a class or read a book on bookkeeping/accounting instead and save your money on this guide.

for the simple-minded
I was really disappointed in this book. Most of the material was common sense and I didn't find it helpful. There was very little solid direction in terms of planning and preparing to actually START a restaurant business. Any guide on preparing a strong business plan would provide better information. I was irritated that he kept referring to hiring a consultant (he runs his own consulting business which is cited many times).

Too Idiotic
This book was a little too basic for really offering much help in the restaurant business. I was hoping to read about a few examples or case studies but the book seems geared more for devising cutesy by-lines and adages for select basic points. Instead of comparison figures for food costs or start-up costs, the book describes clean-up hints that seem common sense. The author also devoted a large section to franchises and opening up second restaurants that seemed geared for McDonalds franchisees versus independent restauranteurs.

US-centric, less use for the international market
Having eagerly awaited the arrival of this book, when I opened it, I was immediately dismayed at the entirely US-centric contents. Everything is about opening a restaurant in the USA. The author, Howard Cannon, hammers home his American view of the world of restaurants on nearly every page. There is some good advice in the book--advice that should work anywhere in the world. But, if you want to open a restaurant in the UK, France, Spain, Austria, Oz, or anywhere else in the world, you'll have to process every statement, to determine whether it applies to you or only to someone opening a restaurant in America. You'll thus be forced to read more than you need, and there will be massive gaps in the information, which you'll have to fill from other sources. I'm planning to open a restaurant in Spain. Why, then, do I need so much information about the IRS, about how the laws work in different American states, and about how to find information from sources in the States? If you're planning to open a restaurant in the USA, this is probably a really good book to read first. But if you want to open a restaurant in some other country, save your money and look for either a more country-specific book or a more general book that avoids country-specific information. This book should be re-titled "The Complete Idiot's Guide to Starting a Restaurant in America". The title would then not be misleading.
