Do you have any celebrity SCOBYs? I'm looking for Moby's SCOBY.

We don't have Moby's SCOBY, but we were looking at obtaining the SCOBY featured on the Disney television show "Jesse". It turns out that they used a prop made out of latex and not a real SCOBY (that would explain how it could crawl around). Unfortunately there aren't many famous SCOBYs out there. We did have one that slightly resembled the Virgin Mary, but we have not been able to mass produce such a SCOBY.

I just bought a scoby…could someone please share a recipe? I have no idea what to do. Any good youtube videos?

NEVER let your kombucha or S.C.O.B.Y. (Simbiotic Culture Of Bacteria and Yeast), come into contact with any kind of plastic. Kumbucha will readily leach out toxins and plasticizers out of plastic and contaminate and ruin the scoby and subsequent brews. Use only glass. Buy only a scoby that is shipped in a glass container(jar). I sun-brew 24hrs. 2 cups of leaf tea in 3/4 gallon of water in a 1 gallon jar, strain and squeeze the tea. Add 2-3 cups of white cane sugar like C&H and stir. Only use very white sugar, as any tan or brown color indicates molasses content and it will alter the bacteria. Add store bought non-flavored ( no added flavor) kombucha 16 oz. or more kombucha to the tea and sugar mix. Use only Green, Black, Pu-erh, White, or Oolong teas for the brew, and with-out any added flavors or herb tea mixed in. NEVER add any vinegar ever to the kombucha, it is not kombucha any more if vinegar gets in it. Add the scoby to the top of your brew and cover with fine cheese cloth, or clean cloth and secure with a rubber band. If you don't have a scoby use 2 16 oz. bottles of kombucha in the mix and a scobey will form on top if kept in a warm place about 80\degrees F. Brew several weeks or more until it is very tart and sugars are depleted, the kombuche should be a crystal clear amber color at this point.. You can bottle in cage style top bottles and add a teaspoon of sugar, and 2 days later put in refridgerator for storage for a long time. A good tart kombucha is very pro-biotic and healthful, I have been fermenting kombucha perpetually for 6+ years. The addition of sugar when bottling adds fizz. Use a ladel to put kombucha in the bottles and don't disturb the bottom and don't stir it up, dump out the bitter bottom yeast sludge. Use some of your new kombucha as starter, re-use your scoby, it will grow very thick over time, you can discard bottom layer or give it away. Tea ,Water, Sugar, Kombucha(for starter), Scoby and a Jar. Use filtered water.

How much kombucha with each scoby make? Some say that they are guaranteed for 1 gallon per scoby, but most don't specify. My container is 2 gallons.

It can make 2 gallons but you will have to double to recipe and perhaps leave it in a little longer. I usually let mine work for 14-30 days.

Does a scoby lose it's ability to ferment as it gets old or does it die? Or does it continue to produce indefinitely?

When a scoby becomes old and dies it will turn very dark (keep an eye out for bread mold spots too), but from what I read from other kombucha makers, if you take really good care of them they will last a very long time. I typically choose a very good quality healthy baby (the film that appears at the top when you are using the mother) and grow it into a back up mother in case the other should ever die or become moldy. My original mother is quite alive and still thriving. Just remember, it's like a pet. Keep it feed with sugar and you should be good to go. Hope that helps!
