I was disappointed with this book in both content and and quality
I was disappointed with this book in both content and and quality. The majority of the information can be found through Internet searches and the recipes were minimal. There is also content including entire sections that is repeated through several of the Modernist Cooking Made Easy Books so purchasing more than one is even more of a waste of money. They are all cheaply made with only a small number of photos which are all black and white. Some of the pages have misaligned printing with some words cut off. Lastly the recipes are dissapointing at best. I really wanted to like this series.

OK, got me some ideas, and some information on how to use certain thickeners. I am using now Agar-Agar with more confidence, but still the results are not great. So either it takes more practice (I tried three times so far), or maybe I did not read the instructions with enough attention to the details, or maybe because I tried adapting some of the principles to my own recipes. I think I might need to sieve the juice more. But my overall feeling is the book is not detailed and accurate enough.

All about foams and the whipping siphon
Lots of info about foams and gels, and how to make them with a siphon (mostly). Relaxed writing style, very easy to understand. Excellent for beginners and lots of info and recipes for more advanced users. Good reference tables in the appendix summarizing ingredient applications (temps, type of gel etc). Also gives a lot of good links to various websites where you can find more info. Not much to dislike - you could argue it is a bit light on heavy technical explanations - but this book is designed to be acessible rather than heavily technical...

Perfect for Beginning Whipping Siphon Users
Much as we may love modernist cuisine, most of the books and websites are technical and frankly above the reach of anyone just curious about techniques and recipes. Jason's done a fine job with The Whipping Siphon, and certainly cleared a path for me to start experimenting--even helped me choose the proper siphon and brand.Lots of recipes, and a good summary of techniques to push you a little beyond your current boundaries. Most of the questions you probably have about whipping siphons are answered in his book.

Crappy copy with very few useful recepies and black & white crappy pictures! Regret waisting $18+

Highly recommend for any beginner!
Having just introduced to this fun and interesting side of entertaining and "kicking-up" the interest of my dinner guests (plus table conversation), this book provided me with all required to set off at a rapid pace. And, the author knows how to write just what you need without waisting time!

Great Help
Although a little disappointing--the inside pictures are merely in hazy black and white--the information in this little book are very helpful. A lot of the information I found was rather technical, but dealing with this little pressure instrument, one has to understand a little bit of its technology. I suggest perusing one page at a time

Very Informative and excellent as eBook.
Very informative book with very useful recipes on how to use the whipper. Really couldn't find much else out there. Bought it on kindle and has useful live links and coloured photo illustrations on the ipad app. bought another of jason's actual books on infusions and although not a coffee table book and photos black and white it was not nearly as poor quality as some people led me to believe.

The Whipping Siphon Book
Black and White instructions, nothing much to draw you in into exiting you to make other things, butfull of information, but one would easily forget they've got it, unless leave you leave it under your nosethe whole time.. I really wanted this book when I ordered my Cream Whipper with the Chargers, so Ineeded to know what else it can do, because I have never used one before.

Cheap looking and Black and White inside
Really cheap looking (like someone copied) and the inside is black and white with poor paper. This has some good information in it but unfortunately that is outweighed by the fact it is really uninspiring and kind of sad to open.

General part good, recipes disappointment
Was very surprised that all photos in the book were black&white, felt cheated. General part good, recipes disappointment. Tried one, didn't work out, not precise enough!
