Is there any ptfe in this pan... and if not, why is that fact not listed?

No it does not and reason they do not mention it is because they are Ceramic pots and pans not teflon coated. Hope that helps. If you have a ceramic coating, which the majority of European countries use in their cookware, there is no need to mention the lack of teflon. Ceramic is the key word.

Are these pans flat? Someone mentioned that they aren't and that the oil pools around the edges.

There is a very slight dip around the interior edge so oil does pool a bit. It's never been a problem for me as with these I use the oil for flavor more than for browning, as with a regular pan. I make tons of omelets, which are kind of unforgiving, and this pan is a dream. I have two and they are my favorite pans for most purposes.

Does it work on induction cook tops

Yes it works....but it cooks differently than the Greenpan Venice Pro series (made completely of induction-compatible stainless). I found that I needed to use one notch higher setting to get similar performance (Samsung induction stove).
