The Chef's Knife I've Been Looking For!
The media could not be loaded. I've bought a lot of knives over the year, and they always end up falling short. I decided to give this Sedge knife a try because, after reading, I really wanted a Damascus steel blade.I was really impressed with the presentation and packaging for the knife when it arrived. It's a full-tang, Damascus steel blade, with a nice wooden handle. Like every knife you buy, it was sharp out of the box and performed well. I've had it for a month-and-a-half now and have used it as my daily go-to knife. It continues to exceed my expectations. It holds a really sharp edge, cutting just as smoothly as it did when I opened the box. The balance of the knife is perfect and it cleans easily. This knife could easily cost double making it an amazing deal. I can't recommend it enough!

AWESOME HANDLE AND FEEL. GREAT KNIFE!!!
I love this knife. It's beautiful. The weight is enough to give you real control over it as you use it and it sits SO comfortably in my hand that it's easily one of my favorite knives already (and I have Henckel 4-star and 5-star as well as Sabatier knives). If you buy this knife, YOU WILL NOT BE DISAPPOINTED. It is NOT a flimsy knife. It holds an edge wonderfully and it slices incredibly well. There's no drag or resistance when you're using it and it feels incredibly natural. I TOTALLY recommend this knife.

High quality craftsmanship
I bought the set of four. These knifes are a beautifully made with high quality materials. I am almost hesitant to use them and instead display them as the work of art that they are. Initial tests using print paper shows they cut like a razor blade. I then compared them to my old knifes and made me wonder how I was able to work with them for so long. They come in beautiful boxes that make great elegant gifts. I can't say enough about these knives. Very happy with this purchase.

As sharp as its beautiful
I was looking for a serious knife to continue improving my cooking skills. I looked into several models, from softer steel to Damascus hard steel. The good models range from $100 to $300. I was set on paying around $100 or so for a chef's knife, and even had ordered already when I saw the Sedge knives. I canceled my order and switched to these, and I'm very satisfied. They are beautiful (I store them on a magnetic bar over the sink, so they are a beautiful display and easy to grab when I need them) and so sharp! I still think they can be even sharper when I get some whetstones and get them sharpened!

Nothing like the knife pictured. Poor etching- 8" damascus chef knife
Got this knife for a great sale price after buying the santoku. Not much of a fan of the santoku but it's very pretty and after a bit of sharpening it cuts okay. This Chef knife looks nothing like the picture! Very faint layers are seen on the blade. It looks like a failed attempt at creating a damascus look by acid etching. I would bet this is not a layered damascus blade. I own/use several chef knives from this low priced blade to over $300 and I know a thing or two about quality but For the price I could not pass. After a little sharpeneing knife cuts most veg. & meats without too much effort. Certainly not bad for what I paid but I did NOT get what was pictured and that's not right no matter the price. Giving one star because of low price at time of purchase. Never pay the regular price for this item. I will not purchase another Sedge product. In the end both knives cut but it seems like this companies quality control is a roll of the dice.Edit- After a few weeks of use I can say that this chef knife does not have the feel or balance of the santoku model. Not quite as sharp either, even after sharpening on good water stones. I do NOT recommend this knife at any price.

Full Tang Knife retains its sharp edge
WHAT'S GOOD1. Sharp knife - haven't had to sharpen, or even hone this knife after much usage. Cuts flawlessly2. Good weight and balance3. Solid construction - Full tang extends all the way through the wood handleWHAT'S NOT SO GOOD1. Nothing as yet - I'd say the perfect knifeSame comments apply to the paring/kitchen knife I also bought

Item not as pictured does not show any Damascus designs as shown in the Amazon add. I ordered the item twice and both knives where the same no design as pictured although they are razor sharp and appear to be of good quality and a nice handle and well balanced. Advertised as lifetime warranty but the knife does not come with any warranty card or any literature describing the product. I took a chance and kept the 2nd knife which was bought as a Christmas gift so if it is defective I guess I'm screwed!
