I was brewing an English Brown Porter. I do partial mash and made last minute changes to the recipe and didn't check the impact that those changes had on the diastatic power of the grains in the mash. After I ordered the ingredients I noticed that the average diastatic power was just 32 degrees Lintner, which is technically enough for a starch conversion but I could expect a slower conversion or a lower efficiency. So, I added 1 tsp of this amylase enzyme at the beginning of the mash and I got my normal 85% mash efficiency in an hour mash. Perfect!

Well priced amalayse enzyme, had no issues with product. Added it to a banana mash, and within a few minutes it was thinner and I could tell the amalayse was working its magic. Fermentation is taking off like wildfire. One piece of constructive criticism is that this enzyme works best at 160F. There are no instructions to tell you that, so if I had not of known that already - I may not have had these results.
