Yes, a low battery warning will be displayed on the homepage of the Aqara Home app.

Q: Is the battery replacable by the consumer?

Yes, the Aqara Water Leak Sensor uses the CR2032 battery and has an average life of 2 years. You can change the battery by opening the door on the back of the sensor with a coin.

Q: What does homekit add to the use of this product? does a homekit hub replace this product's hub?

An Aqara Hub is required to use the Water Leak Sensor. By using it with Homekit, you can create scenes and automations with other brand's Homekit devices.

Q: Once the sensor has been triggered, will it generate another event when the water recedes and the circuit is no longer closed?

Yes. Much like an occupancy sensor, when the connectivity between the posts is no longer there (lack of water, or conductive water anyway) it will indicate that with an event. That assumes several things though, including: The item is not breached (no water entry, it is somewhat protected for this), that a salt or conductive path doesn't exist (which it may if the water below is standing and evaporates over time), and the battery for the device lasts long enough to reach the time the water is gone. I'll also note that this relies on the water being conductive (having impurities, like most tap water). If the water flow is very high, or the water itself is too pure, it may not detect it at all. Just things to keep in mind when placing it and/or it's probes.
