I've never made capicola but yes, I think they would be suitable for the job you require. Once the bung skin is soaked it becomes fairly pliable and stretchy so useable for making capicola. I found them great for the various types of haggis I tried last year from spicy meat to vegetarian ones. Wishing you success in your endeavours. :)
