I need to replace my 15yo mandolin, I use it monthly for potato gratin — will this do a very fine .75mm slice please

Yes, it will slice as thinly as your old old one. The main thing about this Mandolin is that it is wider which allows one to cut bigger slices which cut be cut just as thinly as using one which has a smaller width. I hope this helps, John

Can you use this to cut bigger vegetables or more suited for smaller ones?

Yes, you could cut bigger vegetables, IF they are soft, like zucchinis. Harder veggies, like potatoes are almost impossible to cut with the julienne blades. You can slice them , but even that is quite difficult and I would not do it without a safety glove

Which slicer has the thinnest setting? Is it 0.5mm? Which one would that be?

You have 3 blades and these range from thin to thick as far as the mandolin blade is concerned there is a dial underneath with takes you from almost zero and upwards
