Is there much difference between this one and the slim version?

I bought and used both. The slim one is considerable thinner and lighter. It will contain a computer and portfolio easily, but not alot more. I used it for travel a lot because it was light and it limited the amount of stuff I would put in it. The straps are the same and permit great amounts of storage and weight distribution. The smaller one has a considerably smaller distance for the straps. I have broad shoulders and it posed a problem over time. It also has a softer shell compared the the larger one which is semi rigid. Hope this helps.

How big is the grid it

About 10" by 13". You can see it in one of the pics. BTW, my measurement is of just the elastic part, not the support around the edge.

Is there a place for water bottles

There isn't a pouch for water bottles, but because of the shape, I just put mine inside the main section closest to the zipper sides. It works for me.

Is this backpack big enough for a high school student? A 1 inch binder and like 3 notebooks?

Yes if you pack light as described. I travel for business and I carry a laptop in a neoprene sleeve (Mac 13") and usually have a notebook full size along with paperwork and some other things. The front compartment really handles all the odds and ends so all you should need to slide in the inside is notebooks etc. it will likely be close to full with those items adding a thick book could put it over the limit. If it doesn't need to haul a boatload of books etc then should be more than enough the base spreads out to allow for about 5-6" worth of thickness for notebooks etc. hope that helps.
