Does anyone have a good sushi rice recipe with this vinegar? How much should I add?

1/3 Cup rice vinegar, 3 Tablespoons Sugar, 1/2 teaspoon salt. Warm in microwave, stir until all sugar is dissolved. Let it cool, Then it is ready to pour and mix into cooled rice. Always use non-reactive containers like glass or enamel, some metals like aluminum change the flavor. Add shiitake mushrooms and carrots and eggs if you like.

Yes. Aji-mirin is literally rice vinegar that has been seasoned, meaning this is indeed aji-mirin. Hon-mirin is the "real stuff" that aji-mirin is looking to mimic; it's a rice vinegar that's been fermented into a wine, adding sweetness to the tart condiment. It's also more expensive to produce. Most recipes calling for mirin can use either with no problem, and often expect you'll be using aji-mirin regardless. I have no idea what Craig is on about.
