Whats the diference between the pros s and the pro s eite??

The difference between the two boils down to the profile of the pad. The Pro-S Elite Shin Pad is lighter and thinner then the Pro-S. It is the preferred pad of players that do not like the feeling of pads. The Pro-S is thicker and more protective.

Is there an easy way to take them off

Yes. My son loves these. Easy on. Easy off.

I'm 6.2, the L is cheaper than the XL but the XL is the suggested size for me. Would be much difference for me if i wear the L instead of the XL?

I bought both the L and XL for my son who is 5' 11" and growing and we decided the L was just not enough "safe" coverage as that was the whole reason to buy this brand in the first place. At 6'2" I would definitely recommend the XL
