I have two sizes of this item the smaller one is 8 L the larger 15 L. 8.5 inch for the 8 L, 10 inch for the 15. great for preserves, jam, though I agree with Pixie the bottoms are thin.

I use mine on a ceramic hob only

I am not aware there are different types of stainless steel sorry and no longer have the packaging to see if that sheds any light.
