Q: Are there really 39,060 mg of potassium per half teaspoon serving? I'm just reading the label. Sounds like a lot.

I googled how much elemental potassium in potassium bicarbonate and found there are 780 mg of elemental potassium in 1/2 teaspoon potassium bicarbonate. Based on that, 39,060 mg is the amount of elemental potassium in 50 half-teaspoons of potassium bicarbonate. So it looks like the label is wrong.

Q: If sodium bicarbonate is called baking soda then is this baking potash

Potash ash is potassium carbonate or hydroxide. Potassium bicarbonate, on the other hand, is a base and is typically used as a leavening agent. It can also be utilized as a low-sodium substitute for baking soda (sodium bicarbonate).

Q: Can I use it to make bread (with flour and water but no yeast)? Do I need to add something else to activate the potassium bicarbonate?

If you want to successfully substitute the yeast called for in a recipe, you just need to swap in the right amount of baking soda and acid to make the dough rise. You can use lemon juice, buttermilk, or milk combined with an equal part of vinegar as your acid. Add all the ingredients according to the recipe.

Q: My label says serving size = 1 gram. Is this per teaspoon, half teaspoon? (No serving spoon came with package). Thanks

There are about 6 grams of potassium bicarbonate per teaspoon. I substitute potassium bicarbonate for baking soda volumes 1 to 1. When I calculate nutrition impact of substitutions in recipes, I use 6 grams (6 servings) per teaspoon used. (FYI note - as is true for baking soda, weight per volume varies somewhat if this is stored unsealed. Bicarbonates Left open to air can absorb water and other things, like odors, to change weight per volume and possibly gaining unplanned flavor impacts.)
