why do some colors weigh 0.48 ounces and others weigh 1.44 ounces?

Just need to watch the model, the heavier one has a leather type in the black panels- and the outside has a rubber surround

Is the grey piece actually metal or plastic?

The grey (color you order) back frame is plastic, good protection, my X gets dropped on tile and gravel now and then.

Is this case compatible with edge-to-edge glass screen protector?

It would be awfully close. I have a Zagg Glass+ Screen protector on my iPhone X and it fits perfectly with the case.

can I use a magnet mount in my car with the case or would I have to add something to the back of it?

I am going say no as there is obvious flat surface or ferrous material to use with a magnet. I’m coming up in 3 years with this case. Very rugged and protective case. Good look to it also. Highly recommend.
