We are delighted to announce a very limited release of Tom Cat Gin Barrel-Aged maple syrup. For this one, we collaborated with Caledonia Spirits from Hardwick, Vermont, makers of the award winning Barr Hill Gin. Tom Cat is their spectacular barrel-aged gin. Through their generosity, we were able to secure a single 25 gallon barrel. Eight months later and the result is a maple syrup that has bright, herbaceous notes. There is a touch of rosemary and juniper which steers the maple to a honey flavor. This is a lighter syrup to use on pancakes and ice cream - a nice choice for summer. We have very limited supplies of this new syrup so don't miss out on trying it.
