Q: Is the wine rack and grid optional?

It isn’t. I use mine bakers rack as a coffee station and I use the wine rack for stainless tumblers.

Q: How much weight does it support?

Im not sure. But I think it says it in the description

Q: Can top shelf be excluded when assembled, and what would new height be? I only have 60inches height to work w but like this unit. Thanx

Not without cutting off part of the back bracket. From the main level it's all one peice. It is an awesome rack. It was very easy to assemble and it is very sturdy. Would have to use a hack saw or a cutoff wheel on a grinder to cut off. I would personally try to make it work the way it is. I don't think it would make the rack any less sturdy tho

Q: I bought the version with the grey engineered wood. Has anyone had issues with the shelves putting off a foul odor?

I have the grey wood color. I haven't noticed anything of this nature though. I'm still very happy with mine.
