Where are the openings for wires to go in?

There are NO openings. You have to drill the holes where you need them and either use grommets or cable glands.

What are the recommended hole sizes pcb for screws to attach pcb? what are recommended screws to secure pcb?

It will depend on what you are attaching it to. The cover already has screws for it.

How do these hold up to direct sunlight UV light? Do they get brittle?

I would imagine these boxes would get brittle eventually if left in sunlight. For exterior use, I would choose a metal enclosure over a plastic enclosure. Alternatively, one could paint it to help with UV protection
