So besides $100, what is the difference in functionality between this (co165-fd) and (cp267-fd)?

The plastic food dehydrator (CO165-FD) is 450 Watt with 5 round plastic trays, while the stainless steel food dehydrator (CP267-FD) is 600 Watt and has 6 square stainless steel trays. Hope this helps!

is it okay to run while you're sleeing or not home?

I have a different Cosori model but to be absolutely safe it is better to run it when home and awake. A few years ago there was a recall of a food dehydrator that posed a fire hazard--check google.

Is there a way to order more of the fruit roll sheets or are there any other ones I can purchase that will fit?

I've tried some other brands and I can tell you that "National Presto Dehydro Fruit Roll Sheets" do not work - they're 1/2" too large. Their nonstick mesh screens do work in the Cosori.
