Q: does the nonstick coating work safely with metal cooking tools or only plastic?

I would only use plastic. I think metal would eventually scratch the surface.

Q: is the frame around the griddle plastic or metal?

It is plastic, but I don’t see any problem with that. Heat stays only in metal part. Using it for 1 year.

Q: Is there any way we can replace the power cord?

I would contact the company and ask them if that is possible.
