If only using this at night and with distilled water only, does it need to be emptied and dried out every day?

If it is not running during the day and the wicks are sitting wet with no air flowing through them, you have a potential for bacterial growth. I would run it all the time. The fan running with the unit is out of water will not harm the humidifier and drying out the filter wicks will help prevent bacterial growth and will not harm the filter wicks.

which filter does it use? MD1-002 or MD1-0034?

The EV100 uses the MD1-0034 Filter Wicks. The MD1-0002 Filter Wicks are too thick.

Can you use tap water?

You can use tap water but the filters will last longer with distilled or reverse osmosis water. Minerals from the tap water will be trapped in the filter and eventually prevent the filter from absorbing any water. The filter would then need to be changed. Under normal conditions a filter wick will last 4 to 8 weeks. You would need to compare the extended useful life of the filter wick using distilled or reverse osmosis water with the cost of the water compared to the price of the filter wicks.
