Q: What's the capacity of the desk clamp - what's the maximum thickness of desk?

I would estimate maximum desk thickness to be very slightly less than 5.75cm

Q: Are you able to physically screw this to the desk or is the use of the clamp a necessity for this to work?

I've only used the clamp. I don't think you can screw it directly onto a desk.

Q: Can it support a blue snowball microphone?

I'm not sure but mine came with a 3/8 5/8 adapter and I'm using a M7 large diaphragm condenser mic, seems sturdy to me.

Unfortunately not. The stand bracket has a 7cm gap but with the clasp and also the mic stand mount, at most it can fit 5cm.
