Works well for busy moms.
I purchased this to provide a new type of pasta to dry and use up all of our extra chicken eggs. I used a semolina and eggs pasta with no problems. I found that a flexible dough is key and to roll each strip in flour before putting it through the machine. The handle does not feel very stable at first, but after a bit of trial the bit of wobble does not affect production. Making pasta this way will replace our purchase of shells, rotini and elbow for our family. It is not as tedious as running pasta through a flattening roller and making thin and fat noodles. Less room for error. Only adjustment I would suggest to manufacturering is a large mouth on the clamp so it would fit my table or counters. My meat grinder and pasta roller fit my table. I had to rig a cutting board up to the table with C clamps to get a stable surface to clamp the machine to. Ultimately, I really enjoyed this machine and would purchase it again.

My Nana would have loved this!
Where has this been all my life?? I LOVE this Cavatelli Maker. I have used it just about every week since I got it. I have, in the past, made Cavatelli by hand and it is a slow labor of love. Some would be too thick, some would be too thin, and so they cooked unevenly. THIS baby makes it so much easier! The machine comes with a small instruction and recipe book that really helps. It is SO easy to use - just clamp it down and start rolling. It is important to get the dough texture and consistency right (as it would be with any pasta making, either by machine or manually). Once you master that, everything else is a cakewalk. The machine is sturdy and well made. The clamp works perfectly and keeps the machine stable while I am cranking away. The crank part turns with ease. It is important to only clean it with a brush (not included but a cheap paint brush will work). Do not immerse it in water. I do use a barely damp paper towel to wipe off the paddles, especially when I am making multiple batches. A bit of the pasta dough can dry and stick to the paddles. I have made up to 3 pounds of Cavatelli at a time with ease. Next weekend we will be making enough to freeze (10 or more batches depending on how many I can manage hand knead). Seriously I love this machine. I want to send one to all of my adult nieces to carry on the homemade pasta tradition!

100% Recommend
After reading the negative reviews I need to whole heartedly recommend purchasing this little machine and why. It kicks out perfect pasta with little effort, mess, and super fast!! First time was definitely a learning curve, yes there were strange little poorly formed pasta blobs (rolled pasta to thin) and yes the nut came off the handle maybe once per batch (still works without, or take the 2 seconds to screw it back on) but after adjusting my pasta thickness and width it makes perfect pasta! From start to finish I can make 4 cookie sheets full of pasta in less than 45 min. Also, I had several recipes but choose to use the Ricotta recipe included in the manual and it has been my go to ever since.

As expected.
Cavatelli maker arrived today. The fit and finish, which is generally good, is about as I expected based upon the reviews that I had read. I do find that the nut that holds the handle seems to work itself loose. I may add a washer to the assembly as another reviewer suggested. I wanted to run some throw-away dough through the machine in order to eliminate any possible manufacturing residue, so I mixed some semolina flour with water to make a quite stiff dough. I then rolled it out to about a quarter inch thickness and cut three-quarter inch strips to put through the machine. Based on other reviews, my primary concern was that the dough was neither too soft nor too sticky. I found, however, that the dough was too stiff, and instead of being shaped correctly, the machine simply cut the strips into rectangles, but did not roll the pieces of dough, or put the ridges on them. I kneaded a little water into the dough so it would be slightly softer but not sticky. The results were much better, and only produced a few "blanks." It is obvious that this machine will be much quicker and easier than using my old gnocchi board. The success will depend on the texture of the dough. Overall, I am pleased with the product and look forward to trying it with my regular cavatelli recipe. UPDATE: I made cavatelli using my regular recipe today (1 pound ricotta, 3 eggs, pinch of salt and about 4 cups of tipo 00 flour, mix, knead well and let rest covered for 30 minutes). I found that I had to flour the strips of dough pretty liberally to keep them from sticking, but the machine worked well. I actually ended up doubling the recipe and making an enormous quantity of cavatelli in a relatively short period of time. My friends had a blast helping, and the end result was fabulous. I would give this product five stars if the nut that holds on the handle didn't work loose, and if it was a bit easier to clean. Overall, though, it is a good product and I would recommend it to anyone who makes cavatelli on a regular basis, or wants to make large quantities at one time.

Very pleased
I waited to write my review until after I had done sev'l batches of cavatelli. I'm here to say I love this little machine. First, it is fast and easy. I already had a pasta rolling machine and bought a motor to make that go faster too, but this machine is even faster and easier than that--hands down. Not only is the machine easy to use, so is the preparation of the dough. Once formed, you roll it out like pie dough and cut strips. You do not want the dough to be paper thin like normal pasta needs to be; it needs to be about 1/4" thick. In a few back and forth motions of the rolling pin, your dough is ready to cut into 3/4" wide strips and be made into cavatelli. Keep the dough on the dryer side rather than wetter and you will have great results. There are 4 recipes included, and I only use the first one w/o eggs b/c my toddler granddaughter is allergic; that way I can keep this machine dedicated to non-egg pasta. The ingredients for that is AP flour, water, a touch of shortening and salt. It works up in minutes. I made up my own recipe too using half AP and half whole wheat flour--all else remained the same. That worked beautifully too. I 'fed' the dough into the roller, and then my 4 1/2 yr old granddaughter cranked it out! She ate it all up both times for dinner! I froze some for myself and have it ready to cook up one day this week. One oddity though--the picture illustrates white plastic rollers, but as another reviewer mentioned, they were not plastic, they were wooden. I didn't allow myself to get all upset b/c I don't know which works better. I kept it as is and am happy with it. I would suggest reading all the other reviews; they helped me a lot b/c they were 'right on.'

Gnocci disaster
Was very excited to find this product (in spite of its high price), especially with all of the good reviews that it received from previous buyers. As it turns out, the 1- and 2-star raters were closer to the truth than were the 4- and 5-star raters. Problems with this machine (???) abound: 1. Wheels and handle turn with jerky motion. 2. Cutters do not cut, they rip the dough. 3. Rollers are so close together that formed gnocci resemble noodles. They have no bulk or substance. 4. Gnocci do not cut and fall cleanly, they tend to pile on each other and drop in clumps. Separating them is difficult to impossible. 5. Construction of the main body was shoddy with sloppy welds and sharp edges. 6. Handle does not tighten on shaft, making turning a wobbly prospect. Gave up after a few passes through the machine. Resorted the the time-tested method of rolling my own gnocci over the tines of a floured fork. Hoping that returning this disappointment is as easy as some reviewers stated. Wish that you would add a zero star rating category. This product would earn that rating from me.

So quick & fun if you use the right dough!
This little machine is fantastic! I put off buying it for quite a while because of the negative reviews, but I’m so glad I finally purchased it! Turn the handle rightside out like other reviews say (it’s on backwards to fit in the box), and hook it to your cutting board (won’t fit on counter). I made my own untraditional recipe & cranked out so many cavatelli so fast! It was super fun, even my husband wanted to play with it! I see no issues whatsoever with the quality - if you use the right dough density (not too stiff) and follow cleaning instructions (don’t wash it), I can’t see this not lasting forever. I have lots and lots of pasta gadgets (every kitchen aid pasta attachment, a chitarra, gnocchi boards, etc) & this one is definitely on par with quality, not to mention the quickest to use. This was my recipe (not traditional, I know! But still so tasty!): 360g flour (I only had AP and it worked fine) 1/2 tsp salt 3 eggs 1/4 cup olive oil My dough was supple and soft but not sticky. Had no problems with the machine at all.

It's Probably Me
My husband LOVES ricotta cavatelli, and when I saw a Top Chef Master cranking them out last week on Bravo I immediately looked to Amazon and chose the CucinaPro cavatelli maker. I had no idea there was such a thing and was thrilled I could have one at such a reasonable price. It was delivered the next day. Amazon rules. After having read the reviews and knowing that dough consistency was important, as is typically the case with pasta machines, I knew my first batch would be an experiment. The first few were dicey, but after a while I started turning out nice-looking cavatelli. Every other one was perfect. No matter what I did to the dough or the machine, every other cavatelli was perfect. I had to pick through them to get the good ones and the bad ones went back through. The bad ones were either malformed cavatellis or flat blanks. Plus, the thumb screw worked its way loose every so often, even after I tightened it with a wrench. I'm going to send it back. The good cavatellis were quite nice and tasted unbelievable.

Homemade pasta made easy!
This little machine is fantastic! I tried it out to make cavatelli and gnocchi, and it worked perfectly — roll the dough through and it comes out looking like something straight from an Italian kitchen. The rollers are easy to clean, which is a huge plus, and they even come with recipes to get you started. If you love homemade pasta but hate the hassle, this thing makes it fun and straightforward. Excellent quality for the price — highly recommend for anyone who enjoys cooking or wants to impress the family!
