very good, very easy, and pretty low carb!
This is as easy as making astronaut food... well almost. Just add water, stir, and cook for a few minutes to get some very close approximation to pancakes. I haven't tried them side by side with standard pancakes, but they look, taste, and feel close enough where I wouldn't realize they weren't normal pancakes unless someone told me.the serving size is pretty small (2 3.5 inch pancakes), but the carbs and calories are pretty low too.

Best Low Carb Pancake Mix
My husband has been following a low-carb diet for a decade. Pancakes are one of the things we miss. We've tried many brands of low carb pancake mixes. Some have been really bad; others have been just OK. The King Arthur is the best we've ever tried. When I started to mix it, I noticed right away that it had a pleasant smell. With other brands, we've had to doctor-up the mix with vanilla and/or cinnamon. That was not necessary this time. The pancakes cooked easily and ended up fluffy. They were as tasty as they mix smelled. We've already re-ordered. I hope they never stop making the mix and are trying the pizza dough next.

TASTES GOOD BUT AT A COST
THIS TASTES PRETTY GOOD FOR A PANCAKE BUT, DESPITE ITS LOW CARB CLAIMS, AS A TYPE 2 DIABETIC IT CAUSES A HUGE GLUCOSE SPIKE FOR ME SO I MIGHT AS WELL EAT CHEAP, REGUAR PANCAKE MIX.

Tastes great.
Although it is a bit pricey, this makes some great pancakes. I watch my carb intake and this allows me to indulge every once in awhile.

Absolutely Delicious and So Easy!
I am obsessed with this pancake mix! As someone who follows a low-carb lifestyle, I’m always on the hunt for something that tastes like the “real thing” without all the carbs — and King Arthur nailed it. These pancakes turn out fluffy, light, and full of flavor every single time.I also love how simple it is to make. Just add water, give it a quick stir, and you’re ready to go. No extra ingredients, no mess, no fuss. I’ve made both pancakes and waffles with it, and both are equally amazing. It’s also great knowing it’s non-GMO, kosher certified, and made by a brand I trust. I’ve even served these to friends who aren’t keto, and they had no idea they were eating a low-carb option! If you’re on the fence, just get it — you won’t regret it. This mix is now a permanent staple in my pantry.

May be deceiving…
First let me start off with the good. These pancakes are really good. This is probably the best thing youll get to actually pancakes. However as someone transitioning from a “loose” carnivore diet where I eat carbs everyday from Avocados and dairy etc.. I bought this pancake mix thinking that it wouldnt really effect my weight loss journey with only being two net carbs per serving. Well guess what, Ive gained 3-4.5 lbs since eating them over the past several days. Also, I remained in a calorie deficit while eating them.Great tasting pancakes, however im not convinced its only two net carbs per serving, as I “supposedly” get the same amount of net carbs from avocadoes.

For a low net carb pancake mix, it's good.
For a low net carb pancake mix, it's good. I've cooked these pancakes a few times and they taste like a regular pancake to me. You need to be careful how much water you put in the mix. To little and the pancakes are a bit dry and too much and they raw in the middle. I also put a bit of MCT oil in the batter and it cooks and cleans up better. The only warning I have it that these are probably not really keto. Modified Wheat Starch can be digested and the amount of fiber shown on the bag is probably optimistic at best.
