is the pulp noticeable?

It is. There are little pieces of coconut -mostly at the bottom. They can be avoided if you don't particularly like them. I didn't think I would like them at first but now I only look for it "with pulp"

Everyone has different tastes, but I'd say it's slightly sweet but it is definitely on the sweet side.
