Have you ever watched how butchers sharpen their knives? They use a steel, the tool for professionals. I've tried a variety of sharpening tools, and a steel is by far the best way for me (a normal amateur householder) to get the sharpest edge. This steel is perfect too - you want a good long one, so that you can use it on longer knives. It is oval in shape, which gives a good surface area for rubbing along. It is a good "grit" size too - not too coarse, not too fine. Easy to use. So good, I've just bought one for my brother (who's a professional boatbuilder, so knows about sharpening, and is not singing its praises) and for my son (who's just setting up a new flat).
