Does the board still fit on the PI 3 if there are heatsinks installed?

That depends on the heatsinks, my PI 3 did not come with any heat sinks and i have not order any yet, but the one that came with the PI 2 fit (5 mm heatsink) work

How easy is it to break the traces on the breadboard, for those of us who want a more perfboard-like experience?

I don't know if it helps, but every circuit is already perforated on the board with a reinforced metal ringed port. However, breaking the traces on the back side is possible for some of the circuits, but not clean.

Will this board work with the ribbon connectors for the camera interface (csi) and the display interface (dsi) when this board is attached to the pi 3

If you use 15mm or longer spacer, you should be able to run the camera cable between the raspberry Pi and the Pi-EzConnect boards. The HAT definition requires a slot cut through a HAT, however, my experience is that many devices cables do not go through the slot. The camera cable does fit through the slot without any issues. However, it is best to run the cable between the card and the pi â" rather than through the HAT. That way if you ever have to replace it, you can do that easily.If you need spacers, check out our listing on Amazon https://www.amazon.com/dp/B01M71WKMS I have used the camera with the cable running between the Pi-EzConnect board and Pi-2 without any issues. I have not done that with a Pi-3. The Pi-2 and Pi-3 camera and DSI connectors are the same. Please make sure you use the spacers to create the space between the Pi-EzConnect board and the Pi board.
