Q: How do I connect the wires? The instructions were not clear

The wires go under the washer of the top screws. Red wire is minus, should go to the minus on the ceramic connector block, the red marked leg of the probe should be inserted into the block to match up with the red wire. There also should be a link to a video in the instructions.

Q: We have 2 of these and they seem to only work in Celsius mode. Any suggestions?

Pressing the F button should switch it to Fahrenheit, pressing the C should switch it to Celsius. If you reach a temperature over 999.9 degree you need to press the 1 button to switch off the decimal point, it then will display temperatures 1000 to 2500 degree F.
